Breakfast is one of the most important meals of the day. It provides us with energy and awakens our spirits. An Ayurvedic breakfast is also part of the Ayurvedic morning routine. Start every day the same way to avoid stress. Instead, start the morning with routine, relaxation and good food.
If you want to enjoy a truly balanced Ayurvedic diet for breakfast, pay attention to the following:

Especially in the winter months, you can eat more richly than in summer. In Ayurveda, a good "starter" before a proper breakfast is a glass of warm water with lemon or ginger. 6 Ayurveda breakfast recipes
In the Ayurvedic diet, warm dishes that are prepared and eaten in peace are preferred. This not only ensures a relaxed start to the day, but warm dishes are particularly easy to digest, full of nutrients and keep you full for a long time.
In Ayurvedic teachings, food is considered a remedy and medicine: food can also balance the doshas, stimulate the digestive fire and alleviate ailments. All good reasons to try out the Ayurveda recipes at least once!
Now to our Ayurvedic recipes for breakfast - have fun cooking & enjoying them:
1st Sonnhof classic: Date and plum cream
Our own recipe from our Sonnhof cookbook is easy to make and wonderfully delicious:


Ingredients:
- 200 g dried dates (pitted)
- 200 g dried plums
- Water
- 200 ml cream or soy cream
- 1 tbsp freshly grated ginger or 7 ground peppercorns
Preparation:
Halve the plums, pit the dates and chop everything up as desired. Next, soak everything together in water for several hours until the fruit is completely soft. Tip: the water should just cover the fruit.
Squeeze out the juice from the ginger or mix the pepper with the cream and fruit. Finally, leave everything to stand for 30 minutes and enjoy your Ayurvedic breakfast!
Why is this recipe Ayurvedic?
This simple Ayurveda recipe is particularly good for Vata, and this breakfast is also pleasant for Pitta. For Kapha, you should enjoy it in small quantities.
Tip: add 15 ground black peppercorns and ½ teaspoon of ground cinnamon.
It is Ayurvedic because it puts much less strain on your body than our typical Western breakfast with bread, jam, egg and so on. In this way, you don't slow down your agni from the morning, but rather fire it up! So you start the day full of energy!
2nd Ayurveda Vata breakfast: cereal porridge with spices & fruit
This spicy breakfast porridge is particularly suitable for Vata types.


Ingredients:
- 1 handful of rolled oats (such as spelt, barley, wheat, etc.)
- Fruit (preferably seasonal & regional)
- 1 glass of warm water
- 1 glass of oat milk (other plant-based milks are also fine)
- Spices such as fennel, cardamom & aniseed or cloves & cinnamon (recommended in winter)
- Sweetener such as honey (optional)
Preparation:
Heat a pan over a medium heat. Then add the spices and toss everything briefly. Now add the oat flakes - mix everything together well and sauté a little until the aroma spreads throughout the room.
Then deglaze everything with warm water until the flakes are covered. Now let everything simmer over a low to medium heat - the water should have completely evaporated and the flakes should already be slightly soft. Next, you can add the glass of oat milk. Then leave everything to simmer until your ideal breakfast porridge is ready.
In the meantime, you can prepare your fruit. Either simply sauté the fruit in a pan or fry it with a little ghee, butter, oil or margarine. Arrange everything nicely together and your delicious and nutritious breakfast is ready!
Why is this recipe Ayurvedic?
This can be explained quite simply. Firstly, breakfast appeals to all doshas - especially Vata types. Raw food is also suitable for Pittas - but not in combination with cereal porridge. Kapha people may already be satisfied with lemon water in the morning.
Otherwise, breakfast is particularly great because it is warm in the Ayurvedic sense. A warm breakfast is ideal in both winter and summer!

3. ayurvedic breakfast porridge: spelt porridge with freshly grated apple
Spelt is a particularly nutritious grain and, in a porridge with a fruity apple, makes a fortifying and delicious breakfast. It balances Vata and Pitta in particular.


Ingredients:
- freshly ground spelt
- freshly grated apple
- some ghee
- ground cardamom and cinnamon
- fresh ginger
- Raisins
- Maple syrup or other natural sweeteners
- some water
Preparation:
Simmer the ground spelt in the water. As soon as the porridge has reached the desired consistency, you can add raisins, grated apple, various spices, ghee, ginger and a little maple syrup to taste.
4th breakfast recipe: Quinoa and green spelt porridge with fruit
Green spelt is unripe harvested and dried spelt that tastes deliciously nutty. It is rich in fiber and B vitamins. It combines perfectly with quinoa and fruit in an Ayurvedic breakfast porridge:


Ingredients:
- 125 g quinoa
- 1 cup green spelt (unground)
- 1 Apple
- 1 pear
- 1 nectarine
- 1 handful of grapes
- 1 handful of blueberries
- Spices such as cinnamon, cardamom, cloves
- Agave syrup
- Water
Preparation:
Bring the kernels to the boil with twice the amount of water and simmer over a low heat for approx. 25 minutes. Meanwhile, also simmer the quinoa in a large pan for 15 minutes over a medium heat.
Now take the fruit of your choice and cut it into bite-sized pieces. You can then carefully heat this in a pan and stir occasionally until it seems soft enough. Finally, add the agave syrup and cinnamon. Season with cardamom and cloves to taste.
Serve the fruit on top of your quinoa and green spelt porridge and eat your breakfast dish while it's still warm!
Why is this recipe Ayurvedic?
This breakfast is also warm and therefore particularly digestible. Heating the fruit removes the acidity, which simply makes it easier to digest. Your stomach is not burdened in the morning - and it simply tastes good.
5th breakfast recipe: Rice buckwheat with cocoa
Buckwheat and rice are naturally gluten-free and an excellent basis for a balanced Ayurvedic breakfast porridge. The cocoa and dried fruit give this Ayurvedic breakfast a particularly delicious taste:


Ingredients:
- 6 tbsp buckwheat
- 1 cup wholegrain round rice
- 1 Apple
- Dried apricots
- some apple juice
- small piece of ghee or butter
- Cardamom
- Lemon juice
- grated lemon peel
- Cocoa
- Pine nuts
Preparation:
Heat the apple juice in a saucepan. Cut the apples and apricots into small pieces and simmer gently. Add the ghee or butter, cardamom, cocoa and lemon zest. Now liquefy the compote (if necessary) with a little water.
Next, briefly roast the buckwheat without fat. Now you can add the wholegrain round rice and simmer together for 10 minutes. Finally, serve the porridge with the compote and garnish with the pine nuts.
Why is this recipe Ayurvedic?
This recipe is just as light and warm for your stomach. Together with natural, fresh and seasonal products, you are optimally prepared for the day. You'll feel full, but not overfed, and have plenty of energy. We hope you enjoy trying it out!
6th Ayurveda breakfast porridge: Coconut and oat porridge with fresh fruit
This coconut and oat porridge with fresh fruit is perfect for a tropical summer Ayurveda recipe for breakfast.


Ingredients:
- Oat flakes
- Coconut flakes
- Coconut flour
- Star anise
- Ghee
- Coconut milk
- fresh fruit to decorate
Preparation:
Melt the ghee in the pan. Add the rolled oats and toast lightly until fragrant. Then add 1 tbsp coconut flakes and 1 tbsp coconut flour and stir well. Add the star anise and pour in the coconut milk. Now stir everything well so that nothing burns.
To sweeten the porridge, a little maple syrup or other natural sweetener can be added. The porridge can be served with fresh fruit.
Extra tip: Golden milk for breakfast
Whether as a supplement to an Ayurvedic breakfast or for people who don't want to eat anything in the morning - Golden Milk is a nutritious breakfast drink. The turmeric, ginger, cinnamon and pepper support the immune system and cleanse the body.


Ingredients:
- 1 tbsp turmeric powder
- 120 ml water
- freshly grated ginger
- 1 pinch of nutmeg
- 1 pinch of cinnamon
- 1 pinch of pepper
- 1 tsp coconut oil
- 350 ml plant-based drink of your choice
- 1 tsp honey to sweeten if necessary
Preparation:
First put the water, turmeric powder and ginger in a pan and bring to the boil, stirring constantly. You can then stir in the nutmeg. Leave everything to simmer until a slightly thick paste forms. This can be kept in the fridge for around 5 to 7 days.
Then heat the plant milk and stir in the paste. The more turmeric paste you use, the stronger the taste of the golden milk will be. Start with a teaspoon, turmeric lovers can use up to a tablespoon.
You can then flavor the milk with cinnamon, pepper, coconut oil and honey if desired. Stir well - and your Ayurvedic drink is ready! You can of course also enjoy your European Ayurveda® Golden Calm Evening Milk as a nightcap in the evening.
